Christmas Baking
Happy Monday!
I hope you had a great weekend! Mine went by way too fast. I had a really nice time on Friday when I went to dinner with an old work colleague. Then on Saturday I did some online Christmas shopping and a little bit of shopping for myself. I think I am all set for Christmas except for Tj. He is always the hardest to buy for because he is so picky and I hate giving gifts just for the sake of giving - I want to find something he will really love.
Last week I wrote about how baking is one of my favourite things to do to get in the holiday spirit. I woke up early on Sunday and made a list of recipes and ingredients and went to the grocery store. I didn't make any of the traditional recipes my mom makes but these turned out very yummy. I put on a cheesy Christmas movie and baked my little heart away. I did way too much taste testing haha. And there are even enough treats for Tj to take some to his work tomorrow.

Chewy Chai Bars
I love chai tea and chai lattes so much! These bars are yummy. They are soft and chewy and not too sweet. I put extra spices so they are nice and chai-y. And they kind of taste like gingerbread so they are definitely holiday appropriate.
Skillet-Roasted Maple Cinnamon Pecans
I used almonds instead of pecans because I like them better and I already had some in the pantry haha. These are surprisingly delicious and super easy to make. The maple cinnamon flavour tastes like Canada.

These are a peanut butter chocolate chip caramel cookie from the tv show How I Met Your Mother. They aren't Christmas-y at all but they are now! They are so yummy. I’m still trying to figure out how to not burn the caramel but that just means I'll have to keep making these cookies until I get it right. Sounds good to me.
