Easy Baking

Happy Monday! 

I hope you had a great weekend. It was sunny and surprisingly a little bit warmer here in Melbourne. Although, I also bought a new winter jacket this weekend, so it's not that warm. I am definitely noticing that it is staying brighter a little bit longer. It's so weird to facetime people in Canada where it's still bright out at 9:00 pm. I can't wait for summer again!

I've been really wanting to decorate a cake lately. Which is a little surprising, because after the wedding I thought I'd never want to decorate a cake again haha. Cake decorating is a bit of an investment because I need all the supplies, and also it can be a lot of work and it takes a lot of time.

So instead, this weekend I decided to try some other, easy recipes. The best things about these recipes:

  • They are quick - they each take less than 10 minutes to assemble!
  • They don't use a lot of dishes = minimal cleanup!
  • They are both yummy! Get in my belly :)
  • They are mini! Perfect bite-sized treats to go with a cuppa tea!

These are great recipes to do with the kids in your life.

I started with these Chocolate Chip Blondies I found on Pinterest. Yummy! They are like a super soft, chewy, chocolate chip cookie. Mine came out darker than the pictures from the recipe, so I probably left them in too long. I have to convert the oven temperatures from Fahrenheit to Celsius, but I also had the oven fan on, which tends to cook things faster. They're not burnt though, so I'll count that as a win!

I have also been craving these Mini Cinnamon Rolls that I used to make in Canada all the time. Except in Australia, they don't have the crescent rolls that the recipe calls for (or at least not that I can find). But I did find some puff pastry that worked just as well, maybe even a little bit better! And I skipped the easy icing because hello, I already made a batch of Blondies, and I think that's enough sweets to choose from.

I had lots, so I froze some of the treats to save for a later day :) 

It was nice to have a baking experience that didn't end in a baking disaster haha. I did most of the things on my weekend to-do list, except for cleaning the microwave, but that's a job for Tj anyways.
