Hello! I hope you are enjoying the short work week! In Australia both Good Friday and Easter Monday are holidays. Tj and I have rented a car to hopefully get out of the city, but we haven't really planned anything yet. I am hoping to get some trip research done today.

I am really looking forward to Easter… and chocolate! I have seriously been dreaming about chocolate haha.

I wanted to bake a nice Easter treat but guess what… they all have chocolate! I found some really cute recipes on Pintrest and was going to make a carrot cake but it seemed like a lot of work. So in the end I went with a simple Chewy Chai Bar recipe.

I love Chai tea so I thought this recipe sounded delicious. In the end, my squares kind of taste like gingerbread, and they didn't come out as chewy as the pictures look, but they taste delicious! I forgot to add the vanilla (oops) and I screwed up the topping by using brown sugar instead of white sugar (hey, it was already out), but they are still so yummy. This recipe was super easy to make - you melt the butter so you don't have to remember to take it out of the fridge hours before, and you don't need a mixer so the clean up is quick. This would be any easy recipe to make with kids except they might not like the spiciness of the chai.

The ultimate test was when Tj came home and said they were really good (winning!). Tj doesn't have much of a sweet tooth, so the fact that he had a few squares was a good sign.

Final Thoughts: I will definitely make this recipe again just because it was so easy. I would use the proper topping next time (although to be honest they don't even need it) and I would take them out of the oven slightly earlier to try to get them super chewy and soft.
